Ingredients: 1 cup vegan chocolate sandwich cookies like Oreo, crushed. 1/4 cup vegan butter, melted. 1 cup creamy peanut butter. 1/2 cup maple syrup. 1/2 cup coconut cream. 1 teaspoon vanilla extract. 1/2 cup chopped peanuts. 1/2 cup vegan chocolate chips. 1/4 cup chopped dates. 1/4 cup vegan caramel sauce. 1/4 cup coconut oil.
Instructions: Preheat the oven to 350F 175C. In a bowl, mix the crushed cookies and melted vegan butter until well combined. Press the mixture into the bottom and up the sides of a pie dish. Bake the crust for 10 minutes, then let it cool completely. In another bowl, whisk together the peanut butter, maple syrup, coconut cream, and vanilla extract until smooth. Spread the peanut butter mixture evenly over the cooled crust. Sprinkle chopped peanuts, chocolate chips, and chopped dates over the peanut butter layer. In a small saucepan, melt the vegan caramel sauce and coconut oil together over low heat until smooth. Drizzle the caramel mixture over the pie. Refrigerate the pie for at least 2 hours to set.
