Barbacoa tacos are a tasty dish made with slow-cooked, tender beef that is seasoned with traditional Mexican herbs and spices. This recipe is great for busy days because it only needs a few steps to prepare and cooks easily in the slow cooker.
Ingredients: 3 lbs beef chuck roast, cut into chunks. 1 onion, chopped. 4 cloves garlic, minced. 2 chipotle peppers in adobo sauce, chopped. 1 tablespoon ground cumin. 1 tablespoon dried oregano. 1 tablespoon smoked paprika. 1 teaspoon ground cloves. 1 cup beef broth. 1/4 cup apple cider vinegar. Salt and pepper to taste. Corn tortillas, for serving. Optional toppings: diced onion, chopped cilantro, lime wedges, salsa verde.
Instructions: Beef chuck roast, minced garlic, chopped chipotle peppers, cumin, oregano, paprika, cloves, beef broth, apple cider vinegar, salt, and pepper should all be put in a slow cooker. Mix everything together by stirring. Put the lid on top and set the heat to low. Cook for 8 hours, or until the beef is soft and can be easily shred with a fork. While the beef is still hot, shred it with two forks. Barbacoa beef should be served on warm corn tortillas. Onions, cilantro, lime wedges, and salsa verde can be added as toppings if you want.
