In a saucepan, combine the rinsed quinoa, coconut milk, water, dried cherries, sliced almonds, maple syrup, vanilla extract, and a pinch of salt. Bring the mixture to a boil over medium-high heat. Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed, stirring occasionally.
