Scraps of his body were used to make Sherbert Tennyson Esquire, an Earthbound / Mother 3 Horseantula inspired plush modelled on Loki's weird horse son Sleipnir:

and his wings were used for Nahum the Ars Goetia demon plushie:

by the end of the sea of monsters Quest, Grover, Annabeth and Luke all know he’s Sleipnir, and Grover and Annabeth are also reeling with the knowledge that Luke is the reincarnation of Loki.

Percy again calls Luke “Mom” while they’re escaping the Princess Andromeda and Annabeth freaks out because “Wait, he’s your mom???” Grover is getting motion sickness because riding on Sleipnir’s back without a saddle or bridle is not pleasant, and he is faster than any other horse in existence.
