With culinary scissors, cut top side of lobster shells lengthwise. Pull out the meat and rest it on the shell. Season with paprika and Tony Chachere’s Creole Seasoning. Broil lobster tails until lightly browned and lobster meat is opaque, about 5 to 8 minutes depending on thickness. Once cooled, or if using precooked lobster tail, roughly chop the meat and add it to a bowl. Add 2 tbsps vegan mayonnaise, 1/4 tsp lemon zest, juice from one lemon, 1/2 tbsp chopped parsley, 1/4 tsp Old Bay seasoning. Season to taste with Tony Chachere’s. Place lobster mixture on your favorite bun and broil 1-2 minutes in the oven, just to heat the bun. Garnish with lemon wedge. Serve with fries, chips or your favorite potato salad.
