Make your own delicious marshmallows at home without any artificial additives or colorings. These homemade marshmallows are perfect for hot cocoa or roasting over an open fire.
Ingredients: 4 tablespoons unflavored gelatin. 1 cup cold water. 2 cups granulated sugar. 1/2 cup corn syrup. 1/4 teaspoon salt. 2 teaspoons vanilla extract. Powdered sugar, for dusting.
Instructions: In a mixing bowl, combine the gelatin and 1/2 cup of cold water. Allow it to sit for about 10 minutes to bloom. In a saucepan, combine the remaining 1/2 cup of water, granulated sugar, corn syrup, and salt. Heat over medium heat, stirring until the sugar dissolves. Once it's dissolved, stop stirring and let it come to a boil. Use a candy thermometer to ensure it reaches 240F 115C. Once the sugar syrup reaches the right temperature, remove it from heat. Start mixing the bloomed gelatin on low speed, slowly pouring in the hot sugar syrup. Be careful as the syrup is extremely hot. Gradually increase the mixer speed to high and continue to beat for about 10-15 minutes or until the mixture becomes thick, white, and fluffy. Add the vanilla extract and mix for an additional 2 minutes. Prepare a 9x13-inch baking dish by greasing it and dusting it with powdered sugar. Pour the marshmallow mixture into the prepared dish, spreading it evenly. Dust the top with more powdered sugar and let it set at room temperature for at least 4 hours, or overnight. Once set, use a knife or cookie cutters to cut the marshmallows into desired shapes. Dust the cut marshmallows with more powdered sugar to prevent sticking. Enjoy your homemade marshmallows!
