🛒 What You'll Need
1 thick-cut ribeye or NY strip (1.5-2 inches)
Salt & coarse black pepper (season 1hr ahead)
2 tbsp neutral oil (avocado or grapeseed)
3 tbsp butter
4 garlic cloves, smashed
Fresh rosemary sprigs

Season steak generously with salt & pepper 1 hour before cooking (or overnight uncovered in fridge).
Place on a wire rack over a sheet pan. Bake at 250F until internal temp reads 125F (~45-60 min).
Remove and pat bone dry with paper towels. Rest 10 minutes.
Heat cast iron until SMOKING. Add oil.
Sear steak 60-90 seconds per side. Add butter, garlic, rosemary and baste continuously.
Rest 5 min, slice against the grain. Prepare for applause.

Ingredients: 2 bone-in ribeye steaks. Salt and black pepper to taste. 2 sprigs fresh rosemary. 2 cloves garlic, minced. 2 tablespoons olive oil. Optional: Butter for finishing.
Instructions: Set the sous vide water bath to the temperature you want the steak to be done for example, 130F/54C for medium-rare. On both sides, sprinkle the ribeye steaks with a lot of salt and black pepper. Separate the steaks and put each one in its own sous vide bag. Each bag should have a fresh rosemary sprig, minced garlic, and a tablespoon of olive oil added to it. You can add a pat of butter if you want it to be even richer. Make sure the bags don't let air in by vacuum-sealing them. Place the sealed bags in the sous vide water bath that has already been heated. Cook for the amount of time you want, like 2 hours for a thicker ribeye. Carefully take the steaks out of the sous vide bags when they are done cooking. Warm up a grill or cast-iron pan over high heat. Grill or sear the steaks in a hot pan for one to two minutes on each side to get a tasty crust. Let the steaks rest for a few minutes, then cut them across the grain and serve. You can add another pat of butter to the steak at the end if you want it to taste even better. Serve your favorite sides with the perfect sous vide steak.
