In Breath of the Wild, Parcy can be found inside the Riverside Stable. She tells us about royal guard weapons in Hyrule Castle and gives us the Royal Guard's Gear side quest.

To complete this side quest, all you need to do is show her any weapon from the Royal Guard series.

You can also trade any of the set for a ruby.

You can also interrupt her sleeping.

In Tears of the Kingdom, she's moved camp to South Akkala Stable. She's chipping away at an ore deposit to no avail.

I guess she's never heard of a drill shaft.

She's also chipping away at it with a sword, which isn't the smartest thing to do.
