Not all of these compounds are dangerous at normal food levels. Cooking, soaking and other preparation methods can greatly reduce some anti-nutrients. For example, the FDA warns that raw or undercooked kidney beans contain high levels of the lectin PHA, which can cause nausea, vomiting and diarrhea, while properly cooked beans contain much lower levels.
