These delectable cookies feature a rich combination of dark chocolate and sweet blueberries with a hint of olive oil.
Ingredients: 1 cup all-purpose flour. 1/3 cup dark cocoa powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup granulated sugar. 1/4 cup brown sugar. 1/4 cup extra virgin olive oil. 1 large egg. 1 teaspoon vanilla extract. 1/2 cup dark chocolate chips. 1/3 cup dried blueberries.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a bowl, whisk together the flour, dark cocoa powder, baking soda, and salt. In a separate bowl, mix the granulated sugar, brown sugar, and olive oil until well combined. Add the egg and vanilla extract to the sugar-oil mixture and mix until smooth. Gradually add the dry ingredient mixture into the wet mixture, stirring until just combined. Fold in the dark chocolate chips and dried blueberries. Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet. Gently flatten each dough portion with the back of a spoon. Bake in the preheated oven for about 10-12 minutes or until the cookies are set around the edges. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
