Ingredients: 1 cup grated carrots. 1 cup millet flour. 1/2 cup brown sugar. 1/4 cup vegetable oil. 2 eggs. 1/2 cup plain yogurt. 1 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp ground cinnamon. 1/4 tsp ground nutmeg. 1/4 tsp ground ginger. 1/4 tsp salt. 1/2 cup raisins optional.
Instructions: Preheat your oven to 350F 175C and line a muffin tin with paper liners. In a mixing bowl, combine grated carrots, brown sugar, vegetable oil, eggs, and plain yogurt. Mix well. In a separate bowl, whisk together millet flour, baking powder, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt. Add the dry ingredients to the wet ingredients and stir until just combined. If desired, fold in raisins. Divide the batter evenly among the muffin cups, filling each about 2/3 full. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
