Ingredients: 1 cup all-purpose flour. 2 tablespoons cocoa powder. 2 tablespoons sugar. 1 teaspoon baking powder. 1/2 teaspoon salt. 1 cup milk. 1/4 cup vegetable oil. 1 egg. 1/2 teaspoon vanilla extract. 1/4 cup mini chocolate chips.
Instructions: Preheat your waffle iron according to the manufacturer's instructions. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt. In another bowl, beat the egg and then add the milk, vegetable oil, and vanilla extract. Mix well. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay. Fold in the mini chocolate chips into the batter. Lightly grease the waffle iron with cooking spray or oil. Pour the waffle batter onto the preheated waffle iron and spread it evenly. Close the waffle iron and cook until the waffles are crisp and browned, about 3-5 minutes, depending on your waffle iron.
