Make delicious, fluffy homemade marshmallows that are perfect for hot cocoa or s'mores. These marshmallows are simple to make and much better than store-bought ones.
Ingredients: 3/4 cup cold water. 3 tablespoons unflavored gelatin. 2 cups granulated sugar. 2/3 cup light corn syrup. 1/4 teaspoon salt. 2 teaspoons vanilla extract. 1/2 cup powdered sugar. 1/2 cup cornstarch.
Instructions: Mix the gelatin with half a cup of cold water in a mixing bowl. Give it ten minutes to bloom. Add the corn syrup, salt, granulated sugar, and the remaining 1/4 cup of cold water to a saucepan. Using a candy thermometer, heat over medium heat until it reaches 240F 115C. Pour the hot syrup into the gelatin mixture gradually while continuing to whisk. Using an electric mixer set to high speed, beat the mixture until it thickens and becomes fluffy, about 10 to 12 minutes. Beat in vanilla extract and beat one more minute. Mix cornstarch and powdered sugar in a different bowl. Grease a 9 x 9-inch 23 x 23 cm baking dish, then sprinkle the cornstarch and powdered sugar mixture over it. Evenly distribute the marshmallow mixture after pouring it into the prepared dish. For it to set, leave it out at room temperature for at least four hours or overnight. After setting, cut the marshmallows into squares and, in order to keep them from sticking, toss them in the remaining powdered sugar and cornstarch mixture. Now that your marshmallows are homemade, enjoy them!
