Simple potato curry 🥘🍚🥔 Ingredients • 4 medium potatoes, roughly diced • 1 onion, finelt diced • 2 tomatoes, diced • 3 cloves garlic, minced • 1 tsp ground cumin • 1 tsp ground coriander • 1/2 tsp cinnamon • 2 tsp turmeric • 1 tsp garam masala • 1/2 tsp chilli powder or flakes • 400ml can coconut cream • 400g can diced tomatoes • rice of your choice, to serve Method 1. Par boil potatoes until fork tender but not falling apart. 2. Heat a medium saucepan over medium heat and add in oil, garlic and onions and saute until translucent. Add in all the spices and fry until fragrant. Now add the tomatoes and cook for 3 mins. 3. Pour in the coconut cream and stir well to combine. Add in the diced tomatoes and par boiled potatoes and simmer for 15 mins until the sauce reduces slightly. Serve over your desired type of rice.
