This slow cooker chicken curry is a convenient and flavorful meal that can be prepared ahead of time and left to cook throughout the day. The combination of tender chicken, aromatic spices, and creamy coconut milk creates a comforting dish that's perfect for busy weeknights.
Ingredients: 1.5 lbs chicken breasts, diced. 1 onion, diced. 3 cloves garlic, minced. 1 can 14 oz coconut milk. 1 can 14.5 oz diced tomatoes. 2 tablespoons curry powder. 1 teaspoon ground turmeric. 1 teaspoon ground cumin. 1 teaspoon ground coriander. Salt and pepper to taste. Fresh cilantro for garnish optional.
Instructions: Fry chicken, onion, and garlic in small pieces and put them in the slow cooker. Cut up the tomatoes, curry powder, turmeric, cumin, coriander, salt, and pepper. Put them all in a different bowl and mix them together. Mix the ingredients together and then pour them over the chicken in the slow cooker. Put a lid on top and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the chicken is done and the flavors blend. If you want, you can serve it with rice or naan bread and fresh cilantro on top.
