The best veggie curry I’ve made to date! Vegetable Makhani! ABSOLUTELY DIVINE! I simply omitted the paneer cheese to make this a vegan dish & added more veg! Fresh ginger, ALOT of garlic, passatta, cumin, coriander, chilli, turmeric, coconut, homemade cashew cream, cauliflower, butternut squash & fresh spinach gave this curry lots of creaminess, flavour, bite and a healthy kick! With homemade wholemeal naans, homemade kimchi (a refreshing Indian salad made with cucumber, onions & tomatoes) & homemade mango chutney I’ll be sure to make this again! Much better quality & a lot quicker to make than ordering a takeaway curry and as good as you’d get in an Indian restaurant...
