20% rye sourdough with dry figs poached with redwine and bay leaves.

70% Organic Whole Wheat Flour / 20% Organic White Flour / 10% Bread Flour / 2.3% Salt / 65% Water / 60% Firm Starter

Water 68% / High Extraction 60% / Whole 20% / Medium Strong Bread Flour 10% / Wheat Germ 10% / Salt 2.5% / Levain 15%

I couldn't wait for the bread to cool completely down, the smell was too good! When I cut it open the figs were still melting.
