Instructions: In a mixing bowl, combine the cold water and gelatin. Allow it to sit for 10 minutes to bloom. In a saucepan over medium heat, combine the granulated sugar, light corn syrup, and salt. Stir until the sugar is completely dissolved and the mixture reaches 240F 115C on a candy thermometer. Carefully pour the hot sugar syrup into the gelatin mixture, and whisk on low speed with an electric mixer until combined. Increase the mixer speed to high and beat the mixture for 10-12 minutes until it becomes thick and fluffy. It should triple in volume. Add the key lime juice, lime zest, and vanilla extract. Beat for an additional 2 minutes until fully incorporated. You can add green food coloring at this point if you want a more vibrant green color. Grease a 9x9-inch 23x23 cm square pan and dust it with powdered sugar. Pour the marshmallow mixture into the pan and smooth the top. Dust the top with more powdered sugar and graham cracker crumbs if desired. Allow the marshmallows to set at room temperature for 4-6 hours, or overnight. Once set, cut the marshmallows into squares using a sharp knife that has been coated in powdered sugar to prevent sticking.
