A low-carb twist on classic fried rice, this keto-friendly version swaps out rice for cauliflower, keeping all the flavor without the carbs.
Ingredients: 4 cups cauliflower rice. 4 slices bacon, chopped. 2 tablespoons sesame oil. 2 cloves garlic, minced. 1/4 cup soy sauce or tamari. 2 eggs, beaten. 1/2 cup green onions, chopped. Salt and pepper to taste.
Instructions: In a large skillet, cook chopped bacon until crispy. Remove bacon from skillet and set aside, leaving bacon fat in the skillet. Add sesame oil to the skillet and saut minced garlic until fragrant. Add cauliflower rice to the skillet and cook until tender, about 5-7 minutes. Push cauliflower rice to one side of the skillet and pour beaten eggs onto the other side. Scramble eggs until fully cooked. Combine scrambled eggs with cauliflower rice, then add cooked bacon back to the skillet. Pour soy sauce or tamari over the mixture and stir well to combine. Cook for an additional 2-3 minutes. Stir in chopped green onions and season with salt and pepper to taste. Serve hot and enjoy!
