A tasty and nutritious pasta dish made with sausage and pepper zucchini that fits the Paleo diet. This dish is flavorful, dairy-free, and gluten-free.
Ingredients: 1 lb Paleo-friendly sausage, sliced. 2 zucchinis, spiralized into noodles. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 1 onion, diced. 3 cloves garlic, minced. 2 tablespoons olive oil. 1 can 14 oz diced tomatoes. 1 teaspoon dried oregano. 1 teaspoon dried basil. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: Heat the olive oil in a large skillet over medium heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove from the skillet and set aside. In the same skillet, add the diced onion and minced garlic. Saut until the onion becomes translucent, about 2-3 minutes. Add the sliced bell peppers and continue to cook for another 3-4 minutes until they start to soften. Stir in the diced tomatoes, dried oregano, dried basil, salt, and pepper. Let the sauce simmer for 5 minutes. Add the spiralized zucchini noodles to the skillet and toss to coat them in the sauce. Cook for an additional 3-4 minutes until the zucchini noodles are tender but still slightly crisp. Return the cooked sausage to the skillet and heat it through with the rest of the ingredients for 2 minutes. Serve hot, garnished with fresh basil leaves.
