To be honest Iroh should've known better than to ask Azulon this question. Seriously look at the amount of urns Azulon had set up. Obviously he'd trade. Also I'm of the opinion he liked Iroh because he lasted long, still would trade him and Ozai for his daughter or his other kids.

Headcanon: Iroh and Ozai have different mothers. Ozai is the son of a concubine or lower-ranking wife. This helps explain why Ozai is monogamous and never takes another wife about Ursa, since he doesn't want to repeat Azulon's mistakes.

Headcanon: Sozin knew he realistically wasn't going to live to see all Azulon's milestones so he did a speedrun by basically compromising and having Azulon go through milestones early. He also wanted Azulon to know to have multiple heirs unlike him(I personally feel Sozin did have heirs, he just got rid of them and had to settle on Azulon since he was the best out of them all). He basically had Azulon be a teen parent just so he'd understand to have another baby as a backup. Also Sozin killed the baby, mainly to give Azulon an incentive to try for a stronger heir since the first baby wasn't up to standards.
He probably could've just told Azulon but Sozin is a jackass and prefers physical lessons over verbal ones as he felt this would stick harder.

Bear in mind that systems of succession tend to be much less orderly in practice than they are paper.
Edit: Also, in a lot of systems of succession and monarchies it was normal to disinherit children who committed treason and rebelled against the monarch. This was not necessarily the case in medieval Europe, though.
