Not sure what to call this one. Is it Baba Hommous or Hommous Ganoush? I've actually combined both to make a single dip.
200gms eggplant, sliced and cooked on the sandwich maker 400gm tin if chick peas 1/4 onion, 1 garlic clove 2 tablespoons walnut oil, (or olive oil) 2 teaspoons tahini, (you can increase this if you wish) Juice from 1 lime
Cook the eggplant or about 3 minutes. Combine all ingredients in a bowl and use a blender to process the ingredients. Sprinkle with sumac or papprika, fir colour and drizzle some oil over the top. Serve with crackers, wrap, or turkish bread
