These grilled halloumi skewers are a perfect vegetarian kabob option with a flavorful cilantro-tahini sauce. They are easy to make and great for summer barbecues or any outdoor gathering.
Ingredients: 250g halloumi cheese, cubed. 1 red bell pepper, cut into chunks. 1 yellow bell pepper, cut into chunks. 1 red onion, cut into wedges. 2 tablespoons olive oil. Salt and pepper to taste. Wooden skewers, soaked in water.
Instructions: Preheat the grill to medium-high heat. Thread the halloumi cheese, red bell pepper, yellow bell pepper, and red onion onto the soaked wooden skewers, alternating between ingredients. Brush the skewers with olive oil and season with salt and pepper. Place the skewers on the grill and cook for about 2-3 minutes per side, or until the halloumi cheese is nicely browned and the vegetables are tender. While the skewers are grilling, prepare the cilantro-tahini sauce by mixing 1/2 cup of tahini, 1/4 cup of chopped fresh cilantro, 2 tablespoons of lemon juice, 1 clove of minced garlic, and 2-3 tablespoons of water in a bowl until smooth and creamy.
