Ingredients: 2 cups cooked chicken, shredded. 1/2 cup seedless red grapes, halved. 1/4 cup chopped walnuts. 1/4 cup crumbled Gorgonzola cheese. 1/4 cup mayonnaise. 1 tablespoon Dijon mustard. Salt and pepper to taste. 8 slices whole grain bread. Lettuce leaves, for serving.
Instructions: Shred the chicken and put it in a large bowl. Add the grapes, walnuts, Gorgonzola cheese, mayonnaise, and Dijon mustard. Add pepper and salt to taste. The chicken salad should be spread out evenly on 4 pieces of bread. Add lettuce leaves to the top of each. Add the last few slices of bread to make sandwiches. Cut each sandwich in half across the middle, then serve.
