The sweet, savory, and creamy flavors in this Grilled Fig Blue Cheese Prosciutto Flatbread Beauty go so well together. The fresh figs, blue cheese, and prosciutto look beautiful when they're grilled. It's a great appetizer or light meal.
Ingredients: 1 flatbread crust. 6-8 fresh figs, halved. 1/2 cup blue cheese, crumbled. 4-6 slices prosciutto. 2 tablespoons honey. 1/4 cup arugula leaves. Olive oil for drizzling. Salt and pepper to taste.
Instructions: Warm up the grill over medium-high heat. Spread olive oil on both sides of the flatbread and grill for two to three minutes on each side, until it's crispy and has grill marks. Take the bread off the grill and set it aside. Put the fig halves on the grill with the cut side down. Cook for about two minutes, or until they turn caramelized and have grill marks. Cover the grilled flatbread with the blue cheese crumbles. Cut the prosciutto slices into smaller pieces and spread them out on top of the cheese. Place the grilled figs on top of the ham. Spread honey all over the flatbread pizza. Cover the flatbread and put it back on the grill. Cook for three to four minutes more, until the cheese melts and the edges get crispy. Take the pizza off the grill and give it a minute to cool down. To make it taste better, add arugula leaves, a little more olive oil, and salt and pepper to taste.
