Ingredients: 200g almond flour. 200g powdered sugar. 150g egg whites aged, at room temperature. 40g granulated sugar. 1/2 tsp cream of tartar. Gel food coloring assorted colors. 1 cup unsalted butter room temperature. 2 cups powdered sugar sifted. 1 tsp vanilla extract. 1/4 cup milk. SILPAT Mats for baking.
Instructions: Prepare your SILPAT Mats on baking sheets and preheat your oven to 300F 150C. In a food processor, combine almond flour and powdered sugar. Process until fine and well-mixed. Sift into a large mixing bowl. In a separate bowl, beat the egg whites until foamy. Add cream of tartar and continue beating. Gradually add granulated sugar and beat until stiff peaks form. Fold the beaten egg whites into the almond flour mixture until you get a smooth, thick batter. Divide the batter into bowls and add gel food coloring to create different colors for your carousel horses. Transfer colored batters into piping bags fitted with round tips. Pipe horse shapes onto your SILPAT Mats on the baking sheets. Allow them to sit at room temperature for 20-30 minutes to form a skin. Bake in the preheated oven for about 15-20 minutes, or until the macarons have risen and set. Let them cool completely on the SILPAT Mats. In a separate bowl, cream together the butter and powdered sugar until fluffy. Add vanilla extract and milk, and continue to beat until smooth and creamy. Pair up the macaron shells based on similar sizes and sandwich them with a generous dollop of the buttercream filling.
