Ingredients: 2 cups of sliced squash. 1 large onion, thinly sliced into rings. 1 cup gluten-free all-purpose flour. 1 cup gluten-free cornmeal. 1 teaspoon paprika. 1/2 teaspoon garlic powder. 1/2 teaspoon onion powder. Salt and pepper to taste. 2 eggs, beaten. Vegetable oil for frying.
Instructions: Gluten-free all-purpose flour, cornmeal, paprika, garlic powder, onion powder, salt, and pepper should all be mixed together in a bowl. Beat the eggs in a different bowl. The squash slices and onion rings should be dipped in the beaten eggs and then covered evenly in the flour-cornmeal mix. Add enough vegetable oil to a large frying pan to cover the onion rings and squash. Heat the oil over medium-high heat. Carefully use tongs to put the coated onion rings and squash into the hot oil. That should take about 34 minutes per side. Fry them until they are golden brown and crispy. Take the onion rings and squash out of the oil and drain them on paper towels to get rid of the extra oil. Warm it up and dip it in your favorite gluten-free sauce. Have fun with your gluten-free onion rings and fried squash!
