The theme for my next #forestschool session is wild food - where you might find it and what’s safe to eat! Surprisingly to many of us in the West, insects are commonly eaten in other parts of the world - and may also become part of our future food in the near future. They are high in protein and use fewer resources to farm than cattle such as land and water. Lucky me! I got a rather epic Christmas present from the other half - a #foraging belt bag from @foragingshop and an awesome but compact folding #mushroomknife from @opinelofficiel . The knife has a brush for removing soil and a curved blade for stem cutting. The serrated edge on the other side of the blade looks great for cleaning or scraping. Looking forward to taking both of these out to see what I can find! I said I'd let you all know how it went with the mysterious funghi I found on a woodland walk. Thanks to advice from @dendryad (check out her recently published beautiful Celtic colouring book) I enjoyed a week of delicious lunches. Firstly I followed an online recipe (just type the common name into the search engine): I sliced it, rolled it egg and breadcrumbs, fried it in butter and squeezed a bit of lemon over it. Delicious! Then I made various omelettes (see photo).
