Morrocan lentil and chickpea stew 🥘🥕🍅🍄🍃 Ingredients • 400g tin diced tomatoes • 4 cups vegetable stock • 1 carrot, diced • handful beans, chopped small • 1 onion, diced • 3 cloves garlic, minced • 3 large handfuls spinach • 100g mushrooms, diced • 400g tin chickpeas, rinsed • half bunch asparagus, chopped • 1 cup dried lentils • 2 tsp ground cumin • 1 tsp paprika • 2 tsp turmeric • 1 tsp ground coriander • salt and pepper Method 1. Add the diced tomatoes and 2 cups vegetable stock to the slow cooker, pop the lid on and turn on high (cook time is 4-5 hours) or low (7-8 hours). 2. Meanwhile, heat a frypan over medium heat and saute the garlic and onions until translucent. Add in the spices and fry until fragrant. Add all of this into the slow cooker along with the lentils, mushrooms and carrot. 3. About halfway through cooking, add in the remaining 2 cups vegetable stock as well as the beans, asparagus and chickpeas. 4. 10 mins before serving, season to taste with salt and pepper and stir through the spinach.
