Ingredients: 2 tablespoons olive oil. 1/2 small onion, finely chopped. 2 cloves garlic, minced. 1/2 teaspoon red pepper flakes adjust to taste. 1 can 28 ounces crushed tomatoes. Salt and black pepper to taste. 4 large eggs. Fresh basil leaves for garnish. Grated Parmesan cheese for serving optional.
Instructions: Warm up a big pan with olive oil over medium-low heat. Add the chopped onion and cook for about three minutes, until it gets soft. Add the red pepper flakes and minced garlic and stir them in. Saut for another one to two minutes, until the food smells good. Add the tomato paste and season with black pepper and salt. Let the sauce simmer for 10 to 15 minutes so it can get a little thicker. With a spoon, make 4 small holes in the tomato sauce. Then, crack an egg into each hole. Put the lid on the pan and cook for 5 to 7 minutes, or until the egg whites are set but the yolks are still a little runny. If you want, you can add grated Parmesan cheese and fresh basil leaves as a garnish. Serve hot with toast or crusty bread.
