This one-pot linguine dish is bursting with flavors from roasted red peppers, cherry tomatoes, and creamy brie cheese. It's a quick and easy meal that requires minimal cleanup.
Ingredients: 8 oz linguine pasta. 1 cup roasted red peppers, sliced. 1 cup cherry tomatoes, halved. 4 oz brie cheese, rind removed, diced. 3 cloves garlic, minced. 2 cups vegetable broth. 2 tablespoons olive oil. 1 teaspoon dried basil. Salt and pepper to taste. Fresh basil leaves for garnish optional.
Instructions: Put brie cheese, minced garlic, vegetable broth, olive oil, dried basil, salt, and pepper in a large pot. Add the linguine and mix it all together. Over medium-high heat, bring the mix to a boil. Lower the heat, cover, and let it simmer for 15 to 20 minutes, stirring every now and then, until the pasta is done and most of the liquid is absorbed. After it's done, take it off the heat and cover it for 5 minutes. Stir the pasta slowly to make sure it's well mixed. If you want, you can serve it hot with fresh basil leaves on top.
