INGREDIENTS

6 ounces - corn kernels, whole 7 ounces - corn kernels, pureed 1/4 teaspoon - chopped thyme 1/2 teaspoon - chopped parsley 2 cups - milk 1 tablespoon - flour 1/4 teaspoon - salt 1/8 teaspoon - white pepper 3 eggs 2 egg whites 1 quart - boiling water 1 tablespoon - olive oil 4 ounces - blackberries

Combine corn, thyme, parsley, milk, flour, salt, and white pepper in a saucepan. Bring to a boil, remove from heat, and allow to cool completely.

In a separate large bowl, combine eggs and egg whites. Beat well; then allow bubbles to disappear. Eggs and cooled ingredients in a saucepan should be ready at the same time for the next step.

Preheat oven to 350 degrees (Fahrenheit). Prepare pot of boiling water. Coat 6 individual custard molds with olive oil and place in a 2-inch deep baking pan.
