Ingredients: 1 sheet puff pastry. 2 tablespoons olive oil. 2 cups mixed vegetables such as bell peppers, zucchini, cherry tomatoes. 1/2 cup ricotta cheese. 1/4 cup grated Parmesan cheese. 1 garlic clove, minced. 1 teaspoon dried thyme. Salt and pepper to taste.
Instructions: Preheat the oven to 200C 400F. Roll out the puff pastry on a lightly floured surface and transfer it to a baking sheet. In a skillet, heat olive oil over medium heat. Add minced garlic and saut until fragrant. Add mixed vegetables to the skillet and cook until slightly tender, about 5-7 minutes. Season with thyme, salt, and pepper. Spread ricotta cheese evenly over the puff pastry, leaving a border around the edges. Arrange the cooked vegetables on top of the ricotta cheese. Sprinkle grated Parmesan cheese over the vegetables. Fold the edges of the puff pastry over the filling, creating a rustic crust. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and crisp. Serve warm, and enjoy!
