A vibrant and flavorful Thai-inspired salad that combines tender chicken, colorful bell peppers, shredded cabbage, and fresh herbs. Topped with a zesty dressing, this salad is a perfect balance of textures and flavors.
Ingredients: 2 boneless, skinless chicken breasts. 1 tablespoon olive oil. Salt and pepper to taste. 6 cups mixed greens e.g., lettuce, spinach, kale. 1 red bell pepper, thinly sliced. 1 yellow bell pepper, thinly sliced. 1 orange bell pepper, thinly sliced. 1 cup shredded purple cabbage. 1 cup shredded carrots. 1/2 cup chopped fresh cilantro. 1/2 cup chopped fresh mint. 1/4 cup chopped roasted peanuts. 1/4 cup chopped fresh basil. 1/4 cup sliced green onions. 1/4 cup sesame seeds.
Instructions: Preheat the oven to 375F 190C. Rub the chicken breasts with olive oil, season with salt and pepper, and place them on a baking sheet. Bake the chicken in the preheated oven for 25-30 minutes or until cooked through. Remove and let it cool slightly before slicing it into thin strips. In a large salad bowl, combine the mixed greens, sliced bell peppers, shredded cabbage, shredded carrots, cilantro, mint, roasted peanuts, basil, green onions, and sesame seeds. Add the sliced chicken on top of the salad. In a small bowl, whisk together the dressing ingredients see below. Drizzle the dressing over the salad and toss everything together until well combined. Serve immediately and enjoy your Rainbow Thai Chicken Salad!

A flavorful and easy-to-make noodle dish with the crunch of cabbage and the warmth of ginger.
Ingredients: 200g noodles. 2 cups shredded cabbage. 3 cloves garlic, minced. 1 tablespoon grated ginger. 2 tablespoons soy sauce. 1 tablespoon sesame oil. 2 tablespoons vegetable oil. Salt and pepper to taste. 2 green onions, chopped for garnish. 1 tablespoon sesame seeds for garnish.
Instructions: Follow the directions on the package to cook the noodles. Remove the water and set it aside. Put vegetable oil in a large skillet and heat it over medium-high heat. Add the ginger and garlic that have been minced and saut until the smell is nice. Shred the cabbage and cook it until it starts to wilt a bit. Soy sauce, sesame oil, and cooked noodles should all be mixed in. Sprinkle to mix. Add pepper and salt to taste. Put green onions and sesame seeds that have been chopped on top. Enjoy while hot!
