Silly question, but before seeing your url, I didn't know beetroot soup was a thing. Any chance you'd have a good recipe so I can try it out?

Here's a recipe of beetroot soup how my mom makes it. (note this is a recipe for a big pot of the soup if you want less just cut the ingredients in half).
I will also warn at the start that this is a very mom recipe as a lot of it boils (hehe) down to "I add it how it feels right/the way one like it)

Ingredients:
-3 medium size beetroots
-2-3 carrots
-1 parsley root
-1/4 of celery
-6-7 potatoes
-1/4 of onion
-700 grams of pork bones
-around 4 liters of water
-sour cream ( mom uses the one with 18% fat)
-flour
-beetroot soup in a carton box - this one isn't necesery you can skip it if you can't find it, as it's added for some more flavor and color
-allspice, bay leaf, "vegeta" (its's a mix of dried herbs and vegetables), sugar and vinegar;
Steps:
Wash the bones and boil them for an hour in the water. Collect all the scum during it.
Change the heat to low. Add a few allspice balls, a bayleaf and add some of the "vegeta" (it's really up to your taste with the spices, mom wasn't particular about how much, just said "dunno as much as i like" when asked).
Wash, peal and cut the vegetables (carrots, parsley root, celery, potatoes, onion) then add them to the bones.
4. In the meantime as all of this is cooking grate the beetroots on a on a grater with large mesh. Add a little bit of sugar and sprinkle it with vinegar. Mix it together.
5. When potatoes and the rest of the vegetables are cooked pull out the bones (you can eat the meat off of them if you want, it's really nice).
6. Add the previously prepared beetroots.
7. Cook it all until the beetroots are soft. If you have the beetroot soup in a carton box, this is when you add it (pour it to your taste).
8. Mix up in a cup (or other dish) some a little bit of water with flour until it's smooth, then add the sour cream, consistency should be gloopy. Add some of the soup broth to warm this up, then add it all to the soup. (i can'y really say how much you should make this as it's up to you and your prefrences" mom said).
9. Cook it until verything cooks up (if you can taste the flour it's not ready, it's ready when you can't taste the flour)
10. And it's ready.

I hope it's somehow readable, never shared a "familly recipe" type stuff. Never tried any other beetroot soup than what my mom makes, so i have no other tasted and good recipes to share.
