Instructions: Preheat the oven to 350F 175C. Thinly slice the beets using a mandoline slicer or a sharp knife. In a bowl, toss the beet slices with olive oil, dried rosemary, and salt until well coated. Arrange the beet slices in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the chips are crisp and edges are slightly browned. Remove from the oven and let cool for a few minutes before serving.
