Tonight’s meal is Alaskan halibut from @417fishguy grilled to 130 and served on a sauce packed with roasted red pepper and garlic flavor served with a mushroom risotto and zucchini coins. This meal was amazing! You can find the recipe in @craigtabor’s Live Fire Cooking cookbook. This was originally a wood-fired oven recipe that I adapted for a kamado. Stage 2 #HitTheRoadGiblin - Dana Point/Laguna Beach Thank you for a comfortable lift off @estancialajolla had a great night in front of the outdoor fireplace sipping some @drinkfortaleza Next Stage = Huntington Beach, Palos Verdes, Redonda Beach, Hermosa Beach, Manhattan Beach, Playa Del Rey, Marina Del Rey, Venice Beach and Santa Monica Left Dana Point at 6:30 to ride up the PCH to Laguna. Expected some people but looked forward to enjoying this gem of a beach town without the usual #pagaentofthemasters crowds and traffic....uhhh I was wrong. PACKED! Beaches, streets, hotels and restaurants! What pandemic? I tried to eat at 8 restaurants and was told either a 2+ hour wait or no more reservations from 7:00 PM on. Tried to get a hotel room and rates were summer season. @surfandsandlaguna had one room a suite at the generous COVID-19 rate of $1000 for the night. But hotels = #NoVacancy So I rode on into the night. Through @pelicanbay @newportbeach @balboaislandca #CrystalCove Got to see remodel of @newportbeachcc which grandfather belonged to for decades and was a Giblin Family Easter tradition but now has a clubhouse that is AMAZING.
