Australian Lamb Shank in Red Wine sauce. Ingredients: 3 lamb shanks (I used Australian obviously) 1 cup carrot 1 cup onion 1 cup celery 3 garlic heads 3 cups smashed tomatoes 1/2 cup ketchup 2 tbls thyme 2 cups chicken stock( low sodium) 2 1/2 cup wine ( I used Peller estates: Cabernet Sauvignon) Salt and Pepper to taste Olive oil Directions: First you will need to rinse and pat dry the lamb. Coat it with salt and pepper. Then add some oil into a big pot and add the lamb inside. Sear all sides until golden brown should take about 5 mins. Then remove Chop all your veggies (FINELY) add them into the pot. Once they are fully cooked add the wine, chicken stock,ketchup and thyme. Salt and pepper!!!! Give it a good stir... Add the lamb into the pot & cook on medium heat for about 2hrs. Check on the first hours give it a good stir make sure it doesn’t run out of liquid... Add more wine/chicken stock if it does. Pair with mashed potatoes and green beans. Can add a nice glass of wine(optional) Yes this meal is pricey but so worth it. Have you ever craved tacos so bad that you would do anything to eat one!? Well, that was me today, except I couldn’t find any tacos in the stores with all this pandemic stuff going on. So is it a taco, maybe sloppy joe you may ask? No! It’s a lettuce wrap with a side of peanut sauce! Let’s get messy! Ingredients: Whole pack live lettuce 2 cups basmati rice 2 tomatoes 1 onion 1 lime Handful of cilantro 1 kg pulled pork (I used already made pulled & pork) 2 Tbsp. Greek seasoning Salt and pepper to taste Peanut sauce: 1/2 cup of smooth creamy peanut butter 2 Tbsp. sweet chilli Thai sauce 2 Tbsp. rice vinegar 2 Tbsp. honey 1 Tbsp. sesame oil 1 Tbsp. red pepper flakes 1 tsp. ground ginger 1/3 cup water Combine all the ingredients in a blender and blend until it looks creamy. Top it off with some red pepper flakes and some peanuts. Here’s how to make all this yumminess! First, you will need to place your pulled pork in the oven for about 2 hours at 200 degrees. If you are slow cooking it, leave it on for 6 hours because the more you cook it, the easier it will be to pull apart. Now you can prepare all your ingredients while that is cooking. You can chop your onion, tomatoes and cilantro and place in a bowl. Add some salt & pepper and freshly squeezed lime. (optional) After the pulled pork is ready and ripped apart and your basmati rice is fully cooked you can start making your lettuce wrap first add a spoonful of rice into the centre of the lettuce,then pulled pork and lastly top it off with the tomato salad... My favourite part is dipping it into that peanut sauce Take one bite of this and you will never be the same . It just makes you wanna take more bites over and over again . Healthy Spaghetti squash (GF) Sharing a step by step simple way to make your own spaghetti squash. Using all your favourite toppings of your choice . Ingredients 1 whole spaghetti squash 2 tomatoes 1 cucumber 1/2 red onion Olive oil(salt &pepper) 2 boneless chicken breasts 1 can mushroom gravy 1 whole pack Cremini mushrooms Salt & pepper to taste Olive oil Parmesan(optional) Directions Preheat oven to 375f Wash your squash cut in half including the end. Clean the seeds out and place on a flat pan with parchment paper. Pour oil on the front rub it well and coat with salt and pepper. Place in the oven for about 45mins. Until you can poke your fork through it. Toppings: Fresh garden salad Chop tomatoes, cucumber and onion.add olive oil salt and pepper to salad and toss it. Chicken breasts cover in oil , chicken seasoning salt and pepper. Place in the oven for about 18-20mins on 425f Mushroom gravy pour whole can into a non stick pan. Chop fresh mushrooms add into the pot cook on medium heat until mushrooms are fully soft for about 20mins. Top it off with parsley, cilantro or parsley Add pasta sauce as well.
