Ingredients: 2 medium zucchinis, spiralized. 1/2 cup fresh Thai basil leaves, chopped. 1/4 cup fresh cilantro leaves, chopped. 1/4 cup fresh mint leaves, chopped. 1/4 cup roasted peanuts, chopped. 1 red chili pepper, thinly sliced. 1/4 cup bean sprouts. 1/4 cup cucumber, julienned. 1/4 cup carrot, julienned. 1/4 cup red bell pepper, thinly sliced. 2 cloves garlic, minced. 2 tablespoons vegetable oil. 2 tablespoons fish sauce. 2 tablespoons soy sauce. 1 tablespoon brown sugar. Juice of 2 limes.
Instructions: In a small bowl, mix together the fish sauce, soy sauce, brown sugar, and lime juice to make the dressing. Set aside. Heat the vegetable oil in a large pan over medium-high heat. Add the minced garlic and sliced red chili pepper. Saut for 1-2 minutes until fragrant. Add the spiralized zucchini noodles to the pan and stir-fry for 2-3 minutes until they start to soften but are still slightly crisp. Remove the pan from heat and let the zucchini noodles cool for a few minutes. In a large mixing bowl, combine the Thai basil, cilantro, mint leaves, roasted peanuts, bean sprouts, cucumber, carrot, and red bell pepper. Add the sauted zucchini noodles to the mixing bowl and pour the dressing over the salad. Toss everything together until well combined and coated with the dressing. Serve the Thai Drunken Zucchini Noodles Salad immediately, garnished with extra chopped peanuts and herbs if desired.

Salt and pepper to taste. Sour cream or Greek yogurt for serving optional.

Be sure to toss them halfway through cooking. While the sweet potatoes are roasting, prepare the avocado salsa verde. In a separate bowl, combine the diced avocado, cilantro, red onion, tomatoes, lime juice, diced jalapeo peppers, minced garlic, salt, and pepper. Mix well and set aside. Warm the tortillas according to the package instructions. To assemble the tacos, lay out a tortilla and add a spoonful of black beans, a scoop of brown rice, and a generous portion of roasted sweet potatoes. Top each taco with a generous spoonful of the avocado salsa verde. Optional: Drizzle with sour cream or Greek yogurt for added creaminess. Serve the sweet potato burrito tacos immediately and enjoy!

Sesame seeds, for garnish. Chopped cilantro, for garnish.
Instructions: Cook noodles according to package instructions, then drain and set aside. In a small bowl, whisk together tahini, soy sauce, rice vinegar, maple syrup, garlic, and ginger to make the sauce. In a large skillet or wok, heat a bit of oil over medium-high heat. Add carrots, bell peppers, and snap peas. Stir-fry until vegetables are tender-crisp, about 5-7 minutes. Add cooked noodles to the skillet along with the sauce. Toss everything together until noodles are well coated and heated through. Divide noodle mixture into serving bowls. Garnish with chopped green onions, sesame seeds, and cilantro. Serve immediately and enjoy!

Ingredients: 1 lb beef chuck roast, thinly sliced. 2 cups butternut squash, diced. 1 onion, thinly sliced. 3 cloves garlic, minced. 1 jalapeno, seeded and diced. 1/2 cup beef broth. 1/4 cup bourbon. 2 tablespoons tomato paste. 1 tablespoon chili powder. 1 teaspoon ground cumin. 1/2 teaspoon smoked paprika. Salt and pepper to taste. 8 small flour tortillas. Toppings: avocado slices, shredded cabbage, chopped cilantro, lime wedges.
Instructions: Brown the beef slices in small amounts in a large skillet over medium-high heat. Put away. Put the chopped onion, garlic, jalapeo, and butternut squash in the same pan. About 5 minutes of cooking will soften the food. Put the beef back in the pan. Add tomato paste, chili powder, cumin, smoked paprika, salt, and pepper, and mix them in. Lower the heat and cook until the sauce gets thicker and the beef is soft, about 15 to 20 minutes. You can use a different pan or the microwave to warm up the tortillas. Spoon some of the beef and butternut squash mixture onto each tortilla to make tacos. Place slices of avocado, shreds of cabbage, and chopped cilantro on top. Put lime wedges on the side and serve.

Salt and pepper to taste. 1/4 cup chopped fresh cilantro optional.
Instructions: In a large pot, heat olive oil over medium heat. Add onion, bell pepper, and garlic. Saut until softened, about 5 minutes. Add rice, sazn seasoning, cumin, salt, and pepper. Stir well to coat the rice in the seasonings. Pour in water and add drained pigeon peas. Bring to a boil. Reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked and liquid is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork, and sprinkle with chopped cilantro if desired. Serve hot.

Instructions: Boil sweet potatoes until tender, then mash them. Cook macaroni according to package instructions, then drain. In a saucepan, melt butter over medium heat. Add mashed sweet potatoes, milk, garlic powder, salt, and pepper. Stir until combined. Add cheddar cheese and Parmesan cheese, stirring until melted and smooth. Combine the cheese sauce with cooked macaroni. Serve hot and enjoy!

Bring to a simmer and let cook for 10-15 minutes, stirring occasionally. Add cooked macaroni to the pot and stir to combine. Season with salt and pepper, to taste. Serve hot, optionally topped with vegan cheese and chopped cilantro.

Slowly add the dry ingredients to the wet ones, mixing only until everything is well combined. The white chocolate chips should be carefully mixed in. Using a spoon or cookie scoop, place about 2-inch-diameter drops of cookie dough on the baking sheet that has been prepared. Press down a little on each cookie with the back of the spoon. After the oven is hot, bake for 10 to 12 minutes, or until the edges are just beginning to turn golden. After taking the cookies out of the oven, let them cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way down. After they've cooled, these matcha cookies are great with coffee or tea.
