I finally made my homemade chilimac tonight. I've still got to bake it, but it's all assembled and tastes pretty good. I can't wait to actually finish and eat it here in a bit.

Ingredients: 1 lb ground beef. 1 onion, diced. 2 cloves garlic, minced. 1 can 14.5 oz diced tomatoes. 1 can 15 oz tomato sauce. 2 cups beef broth. 1 tbsp chili powder. 1 tsp cumin. 1/2 tsp paprika. Salt and pepper to taste. 2 cups elbow macaroni. 1 cup shredded cheddar cheese. 1/4 cup chopped fresh cilantro optional.
Instructions: Warm up the ground beef in a big pan over medium-low heat until it turns brown. Add the minced garlic and diced onion and cook until the onion is soft. Add the tomato sauce, beef broth, chili powder, cumin, paprika, salt, and pepper, and mix them all in. Bring to a low boil. Put elbow macaroni into the pan. Cover and cook for 10 to 12 minutes, stirring every now and then, until the macaroni is soft. Put cheddar cheese shreds on top of the macaroni when it's done cooking. Leave it alone for a while to melt. If you want, you can add chopped fresh cilantro as a garnish before serving.

Ingredients: 2 cups macaroni pasta. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz kidney beans, drained and rinsed. 1 can 15 oz diced tomatoes. 1 cup corn kernels. 1 onion, chopped. 2 cloves garlic, minced. 2 tbsp chili powder. 1 tbsp cumin. 1 tsp smoked paprika. 1/2 cup nutritional yeast. 2 cups vegetable broth. Salt and pepper, to taste.
Instructions: Cook macaroni according to package instructions, drain, and set aside. In a large pot, saut onion and garlic until softened. Add chili powder, cumin, and smoked paprika, and cook for another minute. Add black beans, kidney beans, diced tomatoes, corn, nutritional yeast, and vegetable broth. Bring to a simmer and let cook for 10-15 minutes, stirring occasionally. Add cooked macaroni to the pot and stir to combine. Season with salt and pepper, to taste. Serve hot, optionally topped with vegan cheese and chopped cilantro.
