I'm so excited to have just become a Certified Veggiecator! In case you're wondering, Veggiecation is a research-based culinary, nutrition education program. In our healthy kids cooking classes, we get children hands-on with fresh, whole ingredients and teach them how to prepare simple, delicious vegetable-based recipes. It is truly amazing how, when you engage kids in this way and empower them to cook, they have a completely positive response to new, wholesome foods. What's great is we're not only teaching them why vegetables are so good for their bodies, but giving them the skills they need to incorporate them into their diet for their entire life!

Making my favorite #snack today- sweet potato fries! To make these: slice up 1-2 sweet potatoes (any size/shape will do!), lay flat on a pan, drizzle a tiny bit of olive oil & salt, bake at 400 until theyβre nice and crispy (usually around 30 min) π
