I do love curry. Starting to get the knack of using the microwave to my benefit - though, I don't want to long term. I used my leftover yellow squash that I sliced into ribbons, 1/3 broccoflower (floret, stalk, and leaves), and half of block of tofu. I threw all of it in a Tupperware steamer, added curry spice, roasted ground ginger seasoning, a splash of olive oil, and almond milk. Set for 6 minutes and let it cooldown for a couple of hours. When ready to eat, add another 5 minutes to microwave and you have a very tasty curry that is carb/vegan friendly. Took yellow squash and sliced them into ribbons, added Mediterranean seasoning and greek olive oil. Then I warmed it up for 2 mins in the microwave and added it on top of fresh vine ripe/ heirloom tomatoes, and lettuce. Amazingly fresh and tasty. Also, I am marianating mushroom champignons in the Maria La De Oliva olive oil with seasoning. Hands down, this olive oil is the best I have ever had. That includes my time in Tuscany. I cannot imagine a better taste- it has a little pepper, some tart from the olive, and a buttery finish. These two little guys followed me back...I noticed them on the floor when I added more hot water to my tea this morning. I love dandelion seeds; they represent wishes to me. I try to let them back out into the world. Figured it was someone else's wish I was holding. They escaped my hand and ran off before I could let them go. Apparently, they want me to wish upon them or just chill with me... It's no secret that I love food. Got this small can of marinated button mushrooms. Today, I added 1/2 yellow squash, cucumber, and tomato with the mushrooms for about 4 hours. Put it on a bed of spinach. I am not sure if I would call this my late lunch or early dinner. I have another portion I plan to eat later for "dinner". Ouch! I really love to torture myself...this HIIT video was on my feed and I decided to try it: https://youtu.be/B0JX2JsM37Y I added jumprope reps to it (why not?); I target reps vs time. Mentally, I find targeting reps better because I will give it my all. You can also do 20 secs of work followed by 10 seconds of rest. Didn't do great, went for the min reps and the Kneeling to Squat Jumps killed me. It's all about effort. At least, that's what I tell myself. Time for my post workout walk. Decided to be creative, took my ginger turmeric tea (good for digestion and inflammation) and used that to make salad dressing with apple cider vinegar and some of my oil - pretty tasty. Sliced a third of a zucchini, roma tomato, avocado, and added some unsalted peanuts. I think I will call this my super bowl. Definitely hungry after form day! A doctor was concerned I wasn't taking medicine for my IBS or a daily vitamin, but I explained I use eating and how I live to get what I need - that seemed to dispel his concern. Well, after a lengthy convo about what I actually eat and my approach (exercise, meditation etc). So, I wanted to do something more for my body. Ayurveda medicine has always intrigued me, I drink holy basil tea (increase lung capacity) and use turmeric (anti-inflammatory) in my curry dishes. I began taking both Ashwagandha and Astragalus herbs (Liquid form). After taking both of these (1 droplet from each) for a couple of days, I do notice a difference in my energy, clarity, and calmness. Should've let it cool down before I took a bite! Zucchini mini boats made with jackfruit, oyster mushrooms, nutritional yeast, marinara sauce, pinch of monk fruit, and a few splashes of white balsamic. Set the oven at 400 for about 25 minutes then broil for five.
