Made ravioli from scratch and was able to do basically all of it in my wheelchair thanks to my new counter setup (someone was tossing out a slightly wobby high table/counter which my wheelchair fits under very well, even when significantly tilted). And then i ran out of filling and just made normal pasta which was actually better than the ravioli. I dont have a pasta roller or really anything other than a rolling pin and a pastry knife but i was able to get the noodles very thin and they were delicious. And not particularly difficult or time intensive compared to my usual dinners.
I still have half the dough left in the fridge and i think tomorrow night im going to do more pasta and see if i can make anything other than fettuccine
