To be even clearer for those who arenāt going to click the article - the reason that e. coli infested lettuce is such an issue is that if the lettuce is watered with or otherwise exposed to contaminated water, the vascular system of the plant sucks it up, so that itās inside the part of the plant you are going to be eating raw.
Washing and even sterilizing the outside of it wonāt help, and you donāt cook lettuce. The only way to make sure thereās no e. coli in your lettuce is to make sure no e. coli gets in your lettuce.
Which requires testing and regulating the water used in production.
