The latest exclusive launch to look out for is the white tea by Alain Ducasse the Michelin-starred chef who is partnering with Kusmi Tea Parisâ to celebrate their 150th anniversary.
The famous chef enhanced this flavoured white tea with an exclusive recipe combining delicate notes of rose and raspberry. The perfume is very concentrated but not mawkish at all. The liquor is golden and bright, continuing with a soothing floral and fruity aroma. Wonderfully warming and with a refined sweetness. The verdict is beyond expectation.Â

Essere una tealover, personalmente, è come un gioco che mi entusiasma e mi diverte.
Ha un sorriso e uno sguardo di chi vede la bellezza nelle piccole cose del quotidiano. Sa raccontare i tea-time e sedurre i palati con le sue tea recipes come se fosse unâambasciatrice segreta della duchessa di Bedford. Non ha un blog sul tè ma il suo Instagram ne vale dieci. Alessandra Rovetta è, per me, la tealover per eccellenza. Ci siamo viste 2 volte: la prima risale al febbraio del lontano 2014, quando venne in boutique a ritirare il premio di un concorso organizzato sulla pagina Facebook di Arte del Ricevere â il concorso della piĂš bella love tea poem (il testo, però, mi sfugge completamente, ho solo il ricordo del nome del poeta, Robert, ma non so se era Browning o FrostâŚ); la seconda, a un recentissimo pomeriggio di agosto 2017 passato in compagnia di Elisa e Alessandra degustare gli oolong cinesi, gli shincha giapponesi e i fireweed lituani⌠Questa intervista è un piccolo omaggio alla nostra tea friendship. Cosa significa essere una tealover in Italia?
Lâaspetto positivo è che si è ancora in pochi ad esserlo, quindi un tealover è come se avesse ricevuto una sorta di investitura, la cui missione è quella di divulgare il verbo che, in Italia, sta facendosi piano piano conoscere. PerchĂŠ quello che fai ha il sapore della novitĂ , dellâesotico, dellâinnovazione ed è piĂš facile stimolare la curiositĂ e ottenere il consenso, è piĂš facile esercitare un certo fascino, perchĂŠ sconosciuto o appena conosciuto. Penso al ventaglio di scelta dei blog tematici italiani: numericamente pochi ma ben curati, il âmercatoâ non è saturo, câè posto per chi vuole portare il proprio punto di vista, il proprio approccio. Lâeventuale aspetto negativo è che ora, chi lo diventa, chi si avvicina al mondo del tè, potrebbe essere spinto piĂš da una moda, che da uno spontaneo approfondimento della materia. Ma in fondo va bene cosĂŹ, da qualche parte bisogna cominciare e non câè un modo giusto per diventare tealover, no?!
Ă un mondo che, una volta che hai capito câè dellâaltro, non puoi non fare a meno di non allargare i tuoi orizzonti quindi penso che un tealover in Italia, oggi, lo sia in modo autentico.
Hai vissuto, studiato e girato il Regno Unito. I due paesi, UK e lâItalia, sono davvero tanto diversi dal punto di vista teino? E se lo sono, tali differenze si stanno attenuando, rispetto a cinque o a dieci anni fa?
SĂŹ, diversi lo sono ancora. E molto! Le bevande calde sono lâunico denominatore comune di aggregazione sociale, ma noi abbiamo il caffè, loro il tè; noi i bar, loro le tea room e le dining room dei grandi alberghi. Un divario legato sicuramente alle rispettive diversitĂ culturali, sociali, geografiche, e storiche. Tendenzialmente noi italiani siamo piĂš aperti perchĂŠ, poco alla volta, ci stiamo avvicinando alle loro abitudini, vedasi anche lâapertura di tea shop (ahimè per ora dislocati solo nelle medie e grandi cittĂ ) mentre gli inglesi sono ancora abbastanza restii a conformarsi al nostro. Penso al caffè, ad esempio; secondo loro è ciò che per noi non è altro che caffè istantaneo, consumato in quantitĂ industriali, ovvero in capienti mug. Penso anche al classico cappuccino, da noi consumato la mattina con una brioche, loro accompagnano pranzo e cena con scodelle di caffè e latte.
E ammettiamolo, gli inglesi una buona tazza di tè non sanno prepararla, se poi pensiamo a tutto quellâannacquamento di latte. Ma hanno un grande, grandissimo merito: quello di aver creato e perpetuato una tradizione. Per loro il bollitore è un oggetto essenziale dellâhomewarecasalingo, dotazione obbligatoria in ufficio e nelle stanze dâalbergo. Per non parlare dellâafternoon tea.
Tea sommelier: è una professione utile e attuale in Italia? Che caratteristiche dovrebbe avere?
Ă una professione che sta prendendo piede. Attuale? Direi di no, in quanto i tempi non sono ancora maturi e sarĂ una professione PIĂ che utile quando questi [tempi] lo saranno. Chi frequenta i corsi di sommelier in Italia lo fa per scopo tendenzialmente personale, legato sicuramente anche ad unâattivitĂ , ad una professione che si intende avviare o e intraprendere ma il cui sbocco è ancora, ahimè, contenuto. Il tea sommelier dovrebbe essere un consulente a 360°. A meno che non si lavori nel laboratorio di una tea farm (realtĂ non fattibile in Italia), a mio avviso dovrebbe essere una figura poliedrica che si occupa non solo di degustazioni in sala ma anche di fornire consulenza in diversi ambiti, da quello storico a quello gastronomico.
Per me un tea sommelier, dovrebbe quanto piÚ avvicinarsi alla figura di Jane Pettigrew, tea guru che un giorno spero di incontrare, magari condividendo con lei le mie tea room review (per ora mi limito a leggere i suoi libri e a sfornare la sua famosa lemon cake).

Ce ne sono diverse ma quella che secondo me può collocarsi sopra tutte è quella del Reverendo Sydney Smith:
âWhat would the world do without tea? How would it exist? I am glad I was not born before tea.â

Postcard Teas Shop
âSometimes, when you go to the big name tea shops, you feel like they are more flash than substance. Postcard Teas shop is the understated answer to the showy superstores. After all, tea in London is a genuine businesslike affair.Â
Tucked away on a side street right off of the hustle and bustle of Oxford Street, the tea shop is truly an oasis of calm, and is very beautifully arranged with copious tea varieties in cute tins alongside an assortment of elegant handmade teapots from Japan.
A peculiarity from Postcard Teas is in providing a curated variety of teas from small tea farms all over the world, precisely small producers who farm less than 15 acres.
The available teas range in type and price from tiny tea estates throughout Japan, China, India, Vietnam, Taiwan and Korea. Most of the teas are black, oolong and green, but there are also pu-erh and flavoured teas. The choice is almost overwhelming, but the welcoming staff is very friendly and highly knowledgeable. Iâve appreciated the nice artwork on all of the tea tins, which each come with information about the provenance of the teas and brewing instructions. The amount of care that Postcard Teas puts into informing its customers about tea is very apparent.
The coolest aspect is that you can actually send worldwide a âtea postcardâ: you can select from one of their tea varieties and put it in a special envelope and mail it directly from a little red postbox right in the shop. You pay the extra for postage and they take care of the rest for you.Â
I would immensely recommend this shop to any tea lovers, they truly promote the very best of global tea culture."Â

Intervista a Elisa Da Rin
Credo che il tea sommelier ideale debba avere tanta esperienza sul campo, il che significa viaggiare il piÚ possibile nelle tea farms e piantagioni e bere litri e litri di tè diversi sempre ed ovunque senza prediligere (o rifiutare) alcuna varietà . Inoltre credo non debba essere troppo tecnico, rischierebbe di spaventare gli amatori del tè che non si vogliono approcciare in modo troppo accademico a questo mondo.
Sono felice di aprire questa rubrica con Elisa Da Rin Puppel che oltre ad essere una tealover dallâentusiasmo contagioso e una tea blogger e sommelier (sebbene senza titolo formale) dalle competenze poliedriche è anche una grande amica. Che segue questo blog sin dal suo primo giorno, come una fata madrina. Buon viaggio, dunque, a questa nuova avventura in cerca di ricordi, racconti e sorprese dalle soffitte immaginarie dei tealovers.Â
Non sei solo una tealover ma anche, e soprattutto, una tea-blogger. Il sottotitolo del tuo blog recita: âIl Bollitore is a blog about the TEA and "Not Only About Tea". Â Raccontaci di cosa si tratta.
Che domanda difficile! Complicata come definire la mia personalità . Il Bollitore, fondato 3 anni fa su Tumblr, è infatti un blog eclettico e multi-topic... proprio come me! Per quanto mi riguarda, è da una vita intera che provo a concentrarmi solo su una cosa, come ad esempio studiare solo giapponese o aprire un blog che parli esclusivamente di tè e focalizzarmi su quello... ma non ce la faccio proprio! Io sono cosÏ: se mi piace una cosa mi ci appassiono in modo ossessivo e studio tutto lo scibile che posso a riguardo, nella ricerca però, inevitabilmente, scopro svariati argomenti affini o correlati. Nel caso del mio blog spesso associo il tè al cibo, proponendo delle ricette con il tè, ai libri, alla poesia, e, perchÊ no, alla musica, sempre presente nei miei tea-time! Quindi non posso proprio dire che Il Bollitore sia un blog specializzato in tè... ma posso sicuramente affermare che il tè è la sua fonte di ispirazione. Tutto il resto viene da sÊ in una sorta di atto creativo ed impulsivo.
Il tè piÚ esotico che tu abbia mai provato?
La parola âesoticoâ mi fa venire in mente posti lontani e scenari inaspettati. Il posto piĂš remoto dove ho viaggiato, a parte il Giappone dove attualmente vivo, è stato il Sud Africa. Non so se possiamo considerarlo effettivamente âtèâ in senso proprio, poichĂŠ non deriva dalla Camelia Sinensis, ma per me il Rooibos in purezza, altrimenti detto tè rosso, è lâinfuso piĂš esotico e particolare che abbi mai assaggiato. Anche in questo caso, se posso consigliare un brand, vi suggerisco spassionatamente Carmien Tea, ho visitato la loro farm mentre mi trovavo lĂŹ e devo dire che il loro Rooibos è assolutamente di qualitĂ !
Tra i libri sul tè che hai letto, quali sono state le letture piÚ illuminanti? Segui delle riviste, online mag?
Il primo, vero, libro sul tè, che mi ha rapita e portata in uno dei luoghi dove nasce e viene raccolto, è stato Oro verde di Alan Macfarlene, al solo pensiero di quella storia cosĂŹ ben narrata e dei dettagli delle piantagioni mi vengono i brividi! Poi le mie bibbie sono state, e sono tuttâoggi, Manuale del sommelier del tè di Jane Pettigrew, Tea sommelier di Gabriella Lombardi. Per quanto riguarda le proposte on-line, seguo molto le tea news tramite post o foto sui social (in particolare Facebook ed Instagram), e sono solita andare a leggere gli articoli che mi interessano cliccando sul link diretto alla rivista o blog. Ho solo una rivista specializzata che seguo regolarmente, a mio parere la piĂš interessante e ben scritta sia dal punto di vista di contenuti che formato: Fogli di tè, credo che nasca come un on-line magazine, ma io adoro stamparne la versione free in PDF a disposizione sul sito, per poi leggerla su carta e conservarla.
Qualche consiglio che vorresti dare ad altri tealover?
Bevete, bevete, bevete! In ogni angolo di mondo voi siate, qualsiasi tipo e forma di tè vi venga proposta... anche se non di buona qualitĂ , anche se mescolato con altre bevande, anche se utilizzato come ingrediente per alcune pietanze... Lâimportante è assaggiare e scoprire nuovi gusti e sfaccettature dellâessenza che possono sprigionare le foglie della pianta del tè: una fonte di sorprese inesauribile!

GOLDEN MILK
Il GOLDEN MILK â aka Turmeric Latte â è  una portentosa pozione anti raffreddore, ma non solo: è un potente anti-infiammatorio e antiossidante, aumenta le difese immunitarie e lâenergia a livello celebrale, allevia i dolori muscolari, favorisce la digestione, reduce il colesterolo, abbassa il livello di diabete, aiuta a combattere le infezioni, E antidepressivo. E non è tutto: la curcuma è unâeccellente alternativa alla caffeina e portentosa per la salute della pelle (riduce i rossori e lâacne, previene la formazione di rughe e idrata a fondo). Troppo buono per essere vero?
Ecco come prepararlo:
una tazza di latte (in alternativa latte di cocco, soya o mandorla)
1 cucchiaino di curcuma in polvere
1 cucchiaino di zenzero in polvere
un pizzico di pepe nero
miele
Versate il latte in una casseruola, aggiungete la curcuma, lo zenzero e il pepe. Mescolate bene affinchĂŠ non si creino grumi. Scaldate a fuoco medio.
Portate   a quasi ebollizione, continuando a mescolare facendo attenzione a non   surriscaldare troppo il latte.
Rimuovete   la casseruola dal fuoco e lasciate riposare per 10 minuti affinchĂŠ   lâinfusione si perfezioni.
Fate riscaldare una manciata di secondi qualora il latte si sia intiepidito e/o   lo gradite piÚ caldo. Versate in una tazza e dolcificate con miele a   vostro piacimento.
PS. Lo sapevate che le ricerche del Turmeric Latte su Google sono aumentate del 56% da Novembre 2015 a Gennaio 2016?

Am I buying Tea or Champagne?
There must be a reason why tea-lovers call it âThe Champagne of Teasâ⌠Almost 6,000 yen (almost 45 âŹ) in order to get 100 gr of a special spring harvest 2017 of Darjeeling Nurbong.Â
The Japanese tea-assistant at Marriage Frères in Aoyama - posh area of Tokyo - explained to me that this Spring Darjeeling Nurbong was the only harvest of this year, the production of the Indian garden was so tiny that they couldnât have the autumn harvest.
Why the Darjeeling tea is becoming so exclusive?Â
Recently the situation of Darjeeling gardens is getting worse, the Japan Times points out that the main reason of the price increase is related to ethnic disorders between the inhabitant of Darjeeling foothills - the Gurkhas - and their neighbors, the Bengali-speaking community.
âThe world faces a shortage of prized Darjeeling tea because of deadly unrest in the idyllic Indian Himalayan foothills where it is grown. In the dozens of lush green plantations across the picturesque hill station, the June-August harvest season normally provides the bulk of the nearly 8 million kilos of tea sold a year â most of which goes to Europe. But with a showdown between native Gorkhas, who provide the majority of plantation workers, and the West Bengal government now 50 days old, production fell by 90 percent in June.â

Another source, from World Tea News, states that the situation in Darjeeling area got worse due to a worker strike in the tea farms during the Gorkha Janmukti Morcha (GJM: a political summit in order to create the separate state of Gorkhaland within India).Â
During the Gorkha Janmukti Morcha (GJM) led shutdown (the strike hoped to force the establishment of a separate state to be known as Gorkhaland), unwanted vegetation quickly encroached on the neatly groomed tea bushes.

I must say that, as tea-lover, I am quite worry about this situation. But what should I do? âŚtaken by a compulsive tea-shopping attack, I couldnât resist and Iâve bought 100 gr of the exclusive Darjeeling, now I am stretching out every single drop of it and, as strongly recommended by the sale assistant, I will keep some of it for rare teas collection purpose.Â

First comes the Essence of Tea
An Italian friend of mine who lives here in Japan asked me:
âHow comes that on the menu there is a list of at least five different type of teas but the English translation â if there is any â itâs always Japanese Green Tea?â
He is so right! For a non-Japanese reader, in fact, itâs really difficult to guess which tea is going to drink!
Sencha, Shincha, HĹjicha, Kukicha ⌠all of them translated always as âGreen TeaââŚwhen they are so different it taste, color, aroma and cultivar!
Contrary to the English translation, in Japanese there is something before the little character of âcha čśâ, which means âteaâ. Whatâs before? The essence of the tea itself! I am serious, read here:
 ç čśďźSen is âfreshâ, so Sen-cha is fresh tea (i.e. âsteamedâ)
ć°čśďźShin is New, so Shincha is ânew teaâ (i.e. picked up the current year during the first harvest)
çăčśďźÂ Hoji means roasted Hojicha is Roasted tea
ččśďźKuki are the tea-leaves stalks, so stalks-made-tea.
For instance, usually kukicha is considered one of the lowest quality tea, just because it is made of stalks instead of proper tea leaves. But this is not true all the times! The kukicha Iâve tasted today, for instance, it is one of the best quality ever! Not only because it comes directly from a renowned farm in Shizuoka, but also because these little stalks belongs to this year best quality Shincha (New Tea, weâve said). A truly cup of freshness and steaminess expressed in a reach vegetable aroma, as delicious as a cup of King Shincha!

⍠Ice Ice Baby, Ice Ice Baby All right stop, collaborate and listen âŤ
Crack up the ice cubes and make a splash: itâs your private tea party time!
Summer, you know, can be a tricky season for a tea lover. Itâs too damn hot to pull out the kettle and make a cuppa as usual; the solution for those of us who canât stand the heat is to brew our tea ice-cold.
So, in order to get a tasty, aromatic liquor I used to brew my tea according to the slow track method. A rounded richness will surprise you and linger long after youâve finished a sip, leaving a sweet finish on the tongue and down your throat like a mountain breeze. Plus, the drink tastes less astringent and less caffeinated.
This cold brew method implies filling your container with room temperature water. Place your pitcher of water and tea leaves out the refrigerator for the time required and then remove the tea leaves when youâve reached the desired strength (recommended steep times: 3-4 hours x green teas â 6 hours x black teas â 5 hours x oolong teas). Fill ice cube trays with the infused liquor for additional pump to your iced tea, and leave in the fridge the glass of tea to cool down.
Perfect timing for celebration: it occurs just today the National Iced Tea Day which is observed annually on June 10th. This day is set aside to celebrate one of summerâs favourite drinks.
