I live somewhere in that 55% patch. Depending on the day, it can get pretty humid and hot.

You just make the vinegar water mix, put it in a bowl, soak the fruits and or veggies for a few minutes, take them out and rinse them very throughly with water, dry them by gently patting with paper towels or cloth, or by placing them on the paper towels or cloth and rolling them around so all the water gets absorbed, say by putting them in a bowl with paper towels on the bottom, moving the bowl around so the fruit rolls around and dries itself, switching out the cloth or paper towels once it's wet, and eventually having dry fruit.

Then you put that fruit in a sealed container or bag, with a piece of paper towel in with them to absorb any excess moisture. And now you have yummy fruit or veg that will last in the fridge for at last a week, maybe even several weeks!
