A person’s flavour preferences/taste is determined by several factors. These factors include environmental influences (eg. if the food you ate when growing up had more spices you would prefer food with more flavour), learning (eg. your parents let you eat spicy food from a young age and you got used to them as opposed to someone who has never tried it), inborn factors (children generally prefer non bitter foods), the interactions among them as well as genes.

Since a headmate may have grew or fronted in different environments and had different experiences to other headmates with food, or had differences in sense of smell or had different reactions to food, they may have developed different preferences! For example, if a headmate grew up eating sour candy but another headmate didn't, they may like sour candy more than the second headmate (it's familiar!).
