I recently watched this episode as well and my thought was that Zeb was just completely overwhelmed and exhausted in that moment. the extreme trauma reminder from the guns that they stole for Visago, combined with the meeting of Kallus and the knowledge that he was one of the Imperials on Lasan, was a LOT for Zeb to take in. then he has to fight Kallus who is using a weapon that belonged to HIS people, the very people that Kallus helped destroy. and then he loses! to this enemy who was taunting him about his past and his people. I think Zeb in this moment has just had enough for one day and gives up. he has zero strength left
