This delicious Valentine's Day snack combines the sweetness of strawberry Jell-O with the crunch of popcorn for a fun and flavorful combination.
Ingredients: 10 cups popcorn, popped. 1/2 cup unsalted butter. 1 cup granulated sugar. 1 package 3 ounces strawberry Jell-O. 1/4 cup light corn syrup. 1/4 teaspoon salt. 1/2 teaspoon vanilla extract. 1/4 teaspoon baking soda. Red food coloring optional. Valentine's themed sprinkles optional.
Instructions: Preheat oven to 250F 120C. Place popped popcorn in a large mixing bowl, removing any unpopped kernels. In a saucepan, melt butter over medium heat. Stir in sugar, Jell-O powder, corn syrup, and salt. Bring to a boil, stirring constantly. Once boiling, let the mixture cook without stirring for 4-5 minutes. Remove from heat and stir in vanilla extract, baking soda, and food coloring if using. Pour the hot syrup over the popcorn, stirring gently to coat evenly. Spread coated popcorn onto a lined baking sheet. Bake in preheated oven for 45-60 minutes, stirring every 15 minutes. Remove from oven and let cool completely. Break apart any large clumps and toss with Valentine's themed sprinkles if desired. Store in an airtight container until ready to serve.
