Random cooking tip: literally every “easy to make” recipe that calls for boneless, skinless chicken breasts works better if you use boneless, skinless chicken thighs instead. Chicken breasts are finicky bastards at the best of times; chicken thighs don’t give a shit. The recipe bloggers know this – the only reason they call for breasts is because the result looks more photogenic on the plate, and honestly, when your primarily criterion for recipe selection is “has five steps or less”, who cares if it’s not quite as pretty as it could be?
