These Vegan Salted Caramel Apple Pie Bars are a delightful treat combining the flavors of caramel, apples, and oats. Perfect for a cozy dessert or snack, they're sure to satisfy your sweet tooth while being completely vegan-friendly.
Ingredients: 2 cups oats. 1 cup dates, pitted. 1/2 cup almond butter. 1/4 cup maple syrup. 1/4 cup coconut oil, melted. 1 tsp vanilla extract. 1/2 tsp cinnamon. 4 apples, thinly sliced. 1/4 cup coconut sugar. 1 tbsp lemon juice. 1/4 tsp salt. 1/4 cup chopped nuts optional.
Instructions: Preheat oven to 350F 175C. In a food processor, blend oats, dates, almond butter, maple syrup, melted coconut oil, vanilla extract, and cinnamon until a sticky dough forms. Press 2/3 of the dough into the bottom of a lined baking dish to form the crust. In a bowl, toss sliced apples with coconut sugar, lemon juice, and salt. Arrange apple slices evenly over the crust. Crumble the remaining dough over the apples, pressing lightly. Sprinkle chopped nuts on top if desired. Bake for 30-35 minutes until the top is golden brown. Allow to cool completely before slicing into bars. Drizzle with vegan salted caramel sauce before serving.
